Rare green olives with bone:
- Origins: Our rare green olives come from the Laguna de Fuente de Piedra, a UNESCO World Heritage Site in Andalusia. These olives originate from an ancestral, « forgotten » variety cultivated through sustainable agriculture. The old desert olive trees, from which these olives are harvested, are part of a noble project aimed at rehabilitating a protected natural ecosystem that we support.
- Production method: From harvesting to bottling, everything is meticulously prepared on site, ensuring the highest quality. Our producer replicates the ancestral methods of brining olives, as practiced by the Moors when they occupied Andalusia and the Mediterranean world. This traditional preparation involves pricking the olives and preserving them in a marinade of garlic, red peppers, oranges, and carrots sourced from local production. The olives are uncooked, unpasteurized, and contain no preservatives or additives, maintaining their natural purity.
